Easy Vegan Pesto

This walnut vegan pesto is so easy - just toss all the ingredients in a blender or food processor and give it a whirl!
Ingredients
  • 2 cups basil, washed + destemmed
  • ⅓ cup walnuts
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • 1 tablespoon nutritional yeast (optional)
  • ¼-1/2 cup extra-virgin olive oil*
Instructions
  1. Process all ingredients except the olive oil in a high-powered blender or food processor. You may need to stop and scrape down the sides as you go to make sure everything is incorporated.
  2. Slowly add the olive oil, streaming it in as you blend.
  3. Store pesto in an air-tight jar.
Notes
*Add olive oil until the pesto achieves a creamy consistency, that is to your liking. More oil will make a runnier pesto, less a pastier pesto.
