Guacamole Deviled Eggs

A tasty twist on deviled eggs, this recipe adds avocado and tomatoes for a healthy, guacamole-flavored filling.
Ingredients
  • 3 eggs
  • ½ avocado
  • 2 tablespoons diced tomatoes
  • ½ lemon, juiced
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • cilantro (optional)
Instructions
  1. Add 3 eggs to a small pot and cover with an inch of cold water and ½ teaspoon of salt.
  2. Heat on high until the water comes to a boil.
  3. Turn off the heat, cover with a lid, and let the eggs sit for 12 minutes.
  4. Pour out water and rinse eggs with cold water.
  5. Crack and peel eggs carefully.
  6. Slice eggs in half and remove yolks.
  7. Mash avocado and 2 yolks together in a small bowl and stir in tomatoes, lemon juice, garlic powder, salt, and pepper.
  8. Fill egg halves with mixture.
  9. Garnish with cilantro.
