Peanut Butter Chocolate Chia Pudding

- 1 cup unsweetened vanilla non-dairy milk (soy, almond, coconut, etc)
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon natural peanut butter
- ¼ cup chia seeds
- 1 tablespoon sweetener of choice (optional)*
- banana
- cacao nibs
- peanut butter
- Using a blender or hand mixer, combine milk, cocoa powder, peanut butter, and sweetener (if using) until smooth.
- Pour into a smal bowl or storage container and stir in chia seeds.
- Cover and refrigerate for at least two hours.
- Stir and drizzle with peanut butter and any additional toppings.
- Enjoy!
*If you like a sweeter taste but don't want to use added sugar, you could also blend ½ a banana into the mix.
