Peanut Butter Chocolate Chia Pudding

A delicious plant-based breakfast bowl made with chia seeds, chocolate, and peanut butter!
Ingredients
  • 1 cup unsweetened vanilla non-dairy milk (soy, almond, coconut, etc)
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon natural peanut butter
  • ¼ cup chia seeds
  • 1 tablespoon sweetener of choice (optional)*
Optional Toppings
  • banana
  • cacao nibs
  • peanut butter
Instructions
  1. Using a blender or hand mixer, combine milk, cocoa powder, peanut butter, and sweetener (if using) until smooth.
  2. Pour into a smal bowl or storage container and stir in chia seeds.
  3. Cover and refrigerate for at least two hours.
  4. Stir and drizzle with peanut butter and any additional toppings.
  5. Enjoy!
Notes
*If you like a sweeter taste but don't want to use added sugar, you could also blend ½ a banana into the mix.
