Allergy-Free Vegan Waffles

A delicious, whole-grain waffle made without any of the common allergens - no wheat, no dairy, no gluten, no eggs, no nuts.
Ingredients
  • 1 tablespoon chia seeds (or ground flax seeds)
  • 1½ cups oat flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup coconut milk
  • ½ cup pureed fruit of choice*
  • 1 tablespoon maple syrup (or sweetener of choice)
  • coconut oil for cooking
Instructions
  1. In a small bowl, combine chia seeds with 2 tablespoons of water. Set aside.
  2. Whisk all dry ingredient together in a large bowl.
  3. Whisk all wet ingredients together in another bowl. Stir in "chia or flax egg."
  4. Pour wet ingredients into dry and mix until just incorporated.
  5. Lightly grease waffle iron and cook according to directions.
