Ceddar & Chive Cauliflower "Mashed Potato" Waffles

- 2 C. Cauliflower Mashed Potatoes (see below)
- ½ C. White Whole Wheat Flour
- 2 Eggs
- ½ Onion, diced
- 1 Garlic Clove, minced
- 2 T. Chives, diced
- ½ tsp. Baking Powder
- ¼ tsp. Baking Soda
- Salt & pepper to taste
- Cooking spray or olive oil
- Cheddar Cheese, shredded
- Chives, diced
- Eggs, fried
- Greek Yogurt
- 1 small head Cauliflower
- ¼ C. Unsweetened Almond Milk (or milk of choice)
- Salt, pepper, garlic powder to taste
- Heat your waffle maker and preheat oven to 200 F.
- Cook onions and garlic in a saute pan with cooking spray or a bit of olive oil over medium high heat until browned.
- Combine Cauliflower Mashed Potatoes (directions below) with 2 eggs, flour, onion, garlic, chives, baking powder, baking soda, salt and pepper.
- Cook waffles according to waffle maker directions.
- Carefully place cooked waffles (they may be delicate) on a baking sheet and top with about 1 T. of cheddar cheese each.
- Place sheet in the oven to let cheese melt for about 2-3 minutes.
- Remove from oven and add optional toppings like extra chives, a fried egg or a dollop of greek yogurt.
- Enjoy!
- Wash and dice a small head of cauliflower, removing stems.
- Steam cauliflower in a covered pot with about ½ inch of water for about 15-20 minutes.
- Puree steamed cauliflower, milk, salt, pepper and garlic powder in a food processor or high-powdered blender until creamy.
- *Calorie count is for one waffle with cheese, without the toppings.
