Cheddar + Chive Cauliflower Waffles
What to do with all of your leftover mashed potatoes from Christmas dinner — that is the first world problem isn’t it?
And if you’re a grain-free veggie-lover, the question becomes: What to do with all your leftover Cauliflower Mash?
Decisions, decisions.
We all know I’m crazy about my waffle maker. So following Thanksgiving this year, I decided to use my leftovers for a batch of Mashed Cauliflower Waffles.
Up until then I’d used the waffle maker exclusively for sweet treats, so I was excited to explore it’s versatility.
As expected, my all-star waffle maker expertly executed my plan, producing waffles that were nice and crispy on the outside and creamy on the inside.
These Cheddar & Chive Mashed Cauliflower Waffles make an excellent post-Christmas snack that will fill you up without contributing to the calorie overload we’re all experiencing this time of year.
This recipe is quite low-calorie thanks to the veggie base, and full of protein from the eggs and cheese.
If you’d like to swap Cauliflower Mash for real Mashed Potatoes, go right ahead. It should work exactly the same.
- 2 C. Cauliflower Mashed Potatoes (see below)
- ½ C. White Whole Wheat Flour
- 2 Eggs
- ½ Onion, diced
- 1 Garlic Clove, minced
- 2 T. Chives, diced
- ½ tsp. Baking Powder
- ¼ tsp. Baking Soda
- Salt & pepper to taste
- Cooking spray or olive oil
- Cheddar Cheese, shredded
- Chives, diced
- Eggs, fried
- Greek Yogurt
- 1 small head Cauliflower
- ¼ C. Unsweetened Almond Milk (or milk of choice)
- Salt, pepper, garlic powder to taste
- Heat your waffle maker and preheat oven to 200 F.
- Cook onions and garlic in a saute pan with cooking spray or a bit of olive oil over medium high heat until browned.
- Combine Cauliflower Mashed Potatoes (directions below) with 2 eggs, flour, onion, garlic, chives, baking powder, baking soda, salt and pepper.
- Cook waffles according to waffle maker directions.
- Carefully place cooked waffles (they may be delicate) on a baking sheet and top with about 1 T. of cheddar cheese each.
- Place sheet in the oven to let cheese melt for about 2-3 minutes.
- Remove from oven and add optional toppings like extra chives, a fried egg or a dollop of greek yogurt.
- Enjoy!
- Wash and dice a small head of cauliflower, removing stems.
- Steam cauliflower in a covered pot with about ½ inch of water for about 15-20 minutes.
- Puree steamed cauliflower, milk, salt, pepper and garlic powder in a food processor or high-powdered blender until creamy.
- *Calorie count is for one waffle with cheese, without the toppings.
These waffles also make a delicious, savory breakfast option for these cold winter mornings, when topped with a fried egg, as seen here.
You can easily make them gluten-free and grain-free by swapping the white whole wheat flour for gluten-free flour or oat flour.
