Healthy Peanut Butter Oatmeal Chocolate Chip Cookies (Vegan, GF)
Well, I basically gave away the recipe in the title. I mean, three of the ingredients at least.
It’s hard to believe, but these delicious, Healthy Peanut Butter Oatmeal Chocolate Chip Cookies have only 4 ingredients total. They’re also gluten-free and vegan.
If all that isn’t exciting enough, they’re only 75 calories each. If blog posts had emojis, I would have inserted a grenade here — because your mind should be blown.
They’re pretty much the most amazing thing I’ve tasted this month — and I had fonuts twice in the past week.
My parents are visiting this weekend and they both love baked goods, so I thought I’d surprise them with some healthy cookies when they arrived. I googled “healthy cookies” and several three-ingredient recipes came up, including this one from Tone It Up.
My dad hates the taste of protein powder though and loves chocolate chips (well, who doesn’t really), so I modified the recipe to reflect that. I also added natural peanut butter, which resulted in the chewiest, tastiest little morsels ever.
So I guess you’re wondering what the fourth ingredient is? It shouldn’t come as a big surprise since I always bake with them, it’s bananas.
And that’s it – four simple, healthy ingredients that most people probably already have on hand.

4-Ingredient Peanut Butter Oatmeal Chocolate Chip Cookies
Ingredients:
(makes 9 cookies)
1 C. Old Fashioned Oats
2 Ripe Bananas
1 T. Natural Peanut Butter (or nut butter of your choice)
1 oz. Vegan Chocolate Chips
Directions:
1. Mash old bananas (yes, they can have brown spots) in a bowl.
2. Stir in the rest of the ingredients.
3. Mist cookie sheet with cooking spray and distribute batter into approx. 9 cookies.
4. Bake for 10 minutes at 350. Let cookies cool. Serve with almond milk!
Total Calories: about 75 each
Feel free to add your other favorite mix-ins like raisins, dried blueberries or cranberries and nuts.

I’ve made these before. Aren’t they amazing! I like to add pb chips for some extra peanut butter goodness and I usually use crunchy peanut butter or add chopped nuts for a crunch!
