Skinny Basil Chicken Salad Bites
Somebody’s got entertaining on the brain.
No, I’m not already planning my wedding — and don’t worry, once I am I won’t bore you with every little detail.
I’m thinking about all the fabulous summer events on the horizon. Now that I’m done with Saturday school, my schedule has opened up to pursue my heart’s true desire, ya know, besides nutrition, fitness, travel, love, and family, of course.
It’s hosting and toasting!
I absolutely love bringing friends together for any occasion I can muster up excitement over — you may recall Mr. Chow’s 1st birthday.
With my birthday, the 4th of July, and a girlfriend’s Bachelorette coming up, I’ve got big plans for the next month and easy apps are quickly filling up my Pinterest. So for the next few weeks, you can expect to find tons of Easy Summer Apps on my menu.
Last year, I came up with an awesome recipe for Skinny Chicken Salad, so I decided to adapt and repurpose it for today’s easy appetizer.

Skinny Basil Chicken Salad Bites
Ingredients:
Skinny Chicken Salad (with basil)
1 Organic English Cucumber
Directions:
1. Whip up your skinny chicken salad, but sub 1/8 C. of chopped fresh basil for the parsley and dill.
2. Cut up your cucumber and top with a heaping spoonful of chicken salad.
Total Calories: about 30 per bite (makes about 20)
I had these tasty little morsels for lunch yesterday…then again for dinner.
And while I was tempted to eat them for dessert as well, I decided to switch things up with my Blueberry Strawberry Sorbet.
