Coconut Green Tea Pudding
Intrigued? I hope so.
This month’s Recipe Redux theme was “Cooking with Tea,” and considering I already whipped up a Skinny Green Tea Latte in February, I decided I’d better venture out of the beverage category for this challenge.
I was experimenting with frozen coconut meat for the Fit & Funny Foodies Cook-a-long (which is actually going down tonight at 5 p.m. – tune in here) when the idea came to me.
What if I used coconut meat to make ice cream? I’ve pulverized frozen bananas, frozen blueberries, and frozen strawberries into soft serve before, shouldn’t creamy coconut work just as perfectly?
I took a green tea powder packet I had on hand, and went to town with the Vitamix.
The result was absolutely delicious: smooth, creamy, slightly sweet, and a tad exotic tasting.
However, it was not similar to froyo.
The coconut meat gave so much texture and thickness to the creation that it actually resembled more of a pudding.
Call it what you what to call it, it’s good.
May I present: Coconut Green Tea Pudding.
Ingredients:
1 C. Frozen Coconut Meat
1/4 C. Unsweetened Vanilla Coconut or Almond Milk
Stevia to taste
Directions:
1. Combine all the ingredients in a strong blender, food processor, or Vitamix and pulse until it reaches a smooth, creamy consistency.
2. Top with coconut flakes, chia seeds, etc.
3. Enjoy!
Total Calories: 240
I bought my coconut meat from Whole Foods and it came in a package that needed to be slightly defrosted before you could remove the meat.
To note: the package said that you must use all of the contents after opening. This recipe only calls for you to use about 1/2 the bag, so make sure you have something else to make as well so your meat won’t go to waste.
While this stuff may be hard to find. It’s totally worth it. Young coconut meat is so healthy. Psst, “they” call it a superfood. It’s full of heart-healthy medium chain fatty acids, and has a ton of fiber, so it aids in digestion.
As for the matcha powder, it’s full of antioxidants. Together these two make a lean, mean, green dream team.
Btw, if you’re having this for dessert, don’t worry about the tea keeping you up. Matcha powder only has a third of the caffeine as a cup of coffee.

It seems so strange to get coconut ‘meat’ (we just call it dried coconut) out of a bag because back home we just buy the actual coconuts and grate it ourselves. This is definitely more convenient tho. And green tea ice cream? Yes please!
I’ve actully gone for sushi before when I wasn’t feeling it just to get the green tea ice cream at the end haha

This looks so good and who cares if it doesn’t taste like fro yo, I love pudding too. So cute how you added the coconut flakes on top and I just had coconut sugar the other day when I was in California and it was really good. Time to pin the last photo. :)

This months tea challenge was quite a bit of fun. I used green tea in guacamole and later that night I was inspired to create some green tea ice cream with coconut milk. I’ve been testing it out on family and I am about to put it on the website along with a really cool mixer giveaway! I had to pop in and see how you made yours after spotting it in the recipe redux.
